Ricotta cheese is something I’ve never been a huge fan of. That is until I started making my own. If you can boil milk then you can make cheese. No special ingredients, such as rennet, required.

Oh how I love lasagna.  The oozy cheese.  The varying textures from creamy to chewy to crispy.  Warm layers of interesting flavors all coming together in one incredible and complex bite.  Yeah, I’m still doing gluten-free and I had lasagna for dinner last night.
